Ingredients:
1 lb cucumbers, preferably English cucumbers
¾ teaspoon salt
1 tablespoon rice vinegar
1 tablespoon low-sodium soy sauce
1 tablespoon sugar
1 ½ teaspoons sesame oil
2 cloves garlic, minced
1 teaspoon grated ginger
½ teaspoon chili paste (sambal oelek)
2 green onions, thinly sliced
