15 Minute Healthy Roasted Chicken and Veggies

This is one of my personal favorites. I love roasted chicken, roasted vegetables tie for first place. Anytime that I can come up with a recipe that is a healthier version of a favorite meal is a plus to me. Most often, before I decided to regain a proper weight and be healthier, I would drizzle my vegetables with butter and then roast them.


  • 2 Chicken Breasts, cut into 1 inch pieces
  • ¾ cup yellow onion, chopped
  • 1 small zucchini, chopped
  • 1 ½ cup multi colored bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup tomatoes, chopped
  • 2 tbsp Olive Oil
  • ½ tsp Paprika
  • 2 tsp Italian Seasoning
  • ½ tsp salt
  • ½ tsp black pepper

How To Make 15 Minute Healthy Roasted Chicken and Veggies

  1. Preheat the oven to 400*
  2. Spray a rimmed baking sheet with a non-stick spray
  3. Place the cut up chicken on the baking sheet
  4. Place all the cut vegetables onto the baking sheet with the chicken
  5. Sprinkle the seasonings on top of the cut up vegetables and chicken
  6. Toss the chicken and vegetables to mix all the ingredients and seasonings
  7. Place in the oven and bake for 25 to 30 minutes.
  8. Check to be sure the chicken is done, if not, roast another 5 to 10 minutes
  9. Test the vegetables also for doneness
