Crunchy Ramen Noodle Salad:

• 14 ounces coleslaw mix
• 2 3-ounce packages dry ramen noodles, broken into pieces (discard seasoning packets)
• 1 cup matchstick carrots
• ½ cup sliced green onions
• 1 cup slivered almonds, toasted
• ½ cup olive oil
• ¼ cup rice vinegar
• 2 tablespoons honey
• 2 cloves garlic, minced
• 1 tablespoon ginger, minced
• 1 teaspoon sesame oil
• Salt and pepper to taste


1. Mix olive oil, rice vinegar, honey, minced garlic, minced ginger, and sesame oil in a mason jar with a tight lid. Shake well until combined. Season with salt and pepper to your liking.
2. Break up the ramen noodles and add them to a large bowl with the coleslaw mix, carrots, green onions, and toasted almonds.
3. Discard the seasoning packets from the ramen noodles.
4. Drizzle the salad with the dressing and toss everything together until well combined. Enjoy your crunchy Ramen Noodle Salad!
